Chipley Oyster company was established in late 2024. Our goal is to provide exceptional quality and convenience to all oyster lovers in the Wilmington, NC area.
Our oysters are grown in the mud, on the bottom. This is where most oysters naturally occur, and where most traditional harvesting methods target them. Throughout the year, following the varying tidal ranges of the different seasons, we position our oysters strategically to where they can be exposed to sunlight at low tide. Exposure to air and sun gives them a hardy shell and a great shucking experience.
Our farm is located in the pristine waters of Lea-Hutaff island in Pender County, NC. Rich inlet, less than a mile to the south provides us with a steady flow of fresh salty sea water. Not to mention they are also providing our estuary with immense amounts of water filtration.
Flavors - Growing on the bottom gives our oysters that nostalgic, mineral taste that a good oyster has, while a steady direct flow of nutrient rich sea water from the inlet turns our oysters into plump, and VERY salty delicacies.
Our goal is to provide our community with the quality oysters we are used to having, while aiding our wild oyster populations by supplementing harvest with farm raised products.
OUR OYSTERS:
Richie Smalls - Ideally consumed raw, these are a smaller oyster with a deep cup. Easy to shuck and down with your preferred toppings, and a group of family and friends.
Chips' Choices - Named after my grandfathers scuppernong wine, these rocks are deeply cupped and perfect to be eaten raw, thrown on the grill, or however you prefer. Hand selected, these are considered the cream of the crop.
Roasters/BBQ's - All in the name, these are our big boys. These oysters are going to be large, and have a beautiful cup on them making them great to be prepared in any way the chef wants.
UglyDucks/Clusters - Message for availability.
